The Great Kabab Factory is in Kathmandu for a four-day pop-up, 5-8 June at the Radisson Hotel in Lazimpat.
First launched at the Radisson Hotel Delhi in 1998, this Indian restaurant chain runs a daily rotating menu of different kababs, as well as biryani, breads, and desserts. The Factory has over 22 outlets in most major Indian cities as well as internationally in Indonesia, Bangladesh, Thailand and Oman. Now it is, for the first time, in Kathmandu.
The company builds its daily menu around its signature Galouti and Burrah Kababs, and chooses the rest of its items from a bank of over 450 kabab recipes.
The menu on Day 1 consisted of Anaari Dahi Puchkas on Crispy Sevian Bhel: a jam packed pani puri, Galouti Kabab: finely minced lamb shallow fried, Lal Quila Ka Tandori Chooza: a bone-in tandoori chicken drumstick, Malabari Fish Tikka: morsels of mustard-marinated fish, Rosemary Mutton Burrah Kabab: lamb chop sizzler, Falaknuma Murg Elaichi Tikka: boneless skewered cardamom-marinated chicken, Tandori Jhinga Khada Masala: tandoori prawn and Murg Kali Mirch ka Shorba: soup of chicken and black pepper.
Diners can get unlimited helpings of each of these, but do leave room for the main course: Achari Dum Chicken Biryani, served with raita and a variety of dals, curries, and vegetable dishes.

For dessert, choose from Pineapple Jalebi, Coconut Rasmalai, Mango Shahi Tukda, Gaajar Ka Halwa or Paan Ice Cream - or get all five.
There are also custom drinks to go with the kababs, and a parallel menu for vegetarians with pineapple, broccoli and potato tandoori dishes. Yum.
The pop up is a must visit if you identify as a dedicated carnivore, or you are a lover of barbecue.
